Cannellini beans are thin-skinned white beans especially popular in Italian cuisine. The beans are quite large, creamy, and lightly nutty in flavor. Cannellini beans are especially good for preparing vegetable salads and stews, but any other dishes from them are invariably tasty and satisfying.

HOW TO ENJOY

To shorten the cooking time and facilitate the digestion of the beans, they must be soaked. To do this, boil the beans for 2 minutes, remove them from the heat, cover the pan with a lid and leave for 2 hours. Alternatively, cover the beans with water and refrigerate for 6-8 hours. Before cooking, regardless of the chosen soaking method, drain and rinse the beans under running water.
To cook these legumes, cover them with cold water. After water boils, cook slowly for at least an hour. The beans get soft when they are cooked.
Cooking time can be shortened by using a pressure cooker. In this case, 45 minutes may be sufficient for optimal cooking. At this point, you can decide how to use these legumes as ingredient for your recipes.
Cannellini beans are great in salads, casseroles, soups or try a stew with tomato sauce and sage. Alternatively, they can also be consumed on their own by adding extra virgin olive oil, black pepper and a pinch of salt.
