Chickpea flour is especially popular in Italian and Indian cuisine. The population of the Ligurian Sea coast prepares thin pancakes from the product, which are baked in the oven. This is a popular street food. In Italian cuisine it is called "Farinata", in Genoa - "Faina", in France - "Archi" or "Sokka". In Spain, flour is used as an ingredient in shrimp pancakes.
In India it is used to make bread, pancakes, batter, cereals, soups and sweets. Chickpea flour is ideal for breading as it does not absorb oil, so it produces a delicious crispy crust without fat.
