Coconut sugar has a deep, sweet taste and can be used for any kind of baking instead of cane sugar. You won't be able to feel the exotic coconut aroma, the smell will be caramelly with nutty notes. Regular sugar contains no nutrients and so are empty calories. Coconut sugar, however, retains a fair amount of nutrients found in coconut palm. This includes short-chain fatty acids such as polyphenols, antioxidants. It also contains minerals like zinc, iron, calcium and potassium. Finally, it also has a lower GI index, meaning after consuming coconut sugar, a sharp jump in blood sugar level does not occur, the product is absorbed gradually, supplying the body with energy for a long time.
Unrefined coconut sugar is made from the nectar of coconut blossoms. This process is time and labour consuming. Evaporation of the syrup is carried out at a low temperature in order to preserve the maximum amount of nutrients.
