Haricot beans (also called Navy beans) are mild-flavored, dense and smooth in texture. Haricot beans are rich in dietary fiber and are a very good source of both folate and manganese, as well as many minerals like copper, phosphorus, magnesium and iron. In addition, haricot beans are full of protein and vitamin B1. Dried beans contain nearly double the folate that canned beans contain, so it is better to cook them from their dried form!

HOW TO ENJOY
Soak the beans in plenty of water, overnight or at least 6 hours. Drain them and put them in a pot with fresh water to cover by about two inches, a splash of olive oil, the bay leaf and an unpeeled garlic clove. Bring to a boil, lower the flame and simmer, covered Ð for 1 1/2 hours. The beans should be tender before you add the seasonings.
In a food processor, add olive oil and herbs to your taste alongside these cooked beans. Once ready use this spread for appetizers and sandwiches! Haricot beans are also used in most Baked beans recipes.
