Widely present in the Northern Hemisphere, pine nuts are edible seeds of pine trees which take three years to mature before being ready to harvest. They help slow down the aging process and fight dermatological ailments, promote hair and nail growth. The antioxidants they contain fight free radicals and harmful bacteria. Potassium normalizes the water-salt balance, preventing edema. Vitamin E maintains the integrity of cell membranes, protects the skin from harmful ultraviolet radiation.
However, all the beneficial properties would hardly have made pine nuts so popular if not for their pungent taste. It becomes brighter if you lightly toast the nuts before using them.

HOW TO ENJOY
Best known for their use in pesto, pine kernels can also be used in lots of other savoury dishes or as a topping for a risotto. For added crunchiness to your plate simply toast them in the oven at a high temperature.
Pine nuts can be used in a variety of desserts and confectionery. Whole kernels are sprinkled on fruit salads and soufflŽs, added to the dough. If the kernels are pre-ground, they will give the dough a subtle nutty flavor. Also, for flavoring, you can grind the kernels, pour them with water, and then strain the infusion and add it to cereals and teas.
