Polenta or cornmeal is a traditional, coarsely ground, Italian corn flour for creating polenta which is delicious both hot and cold. Polenta and polenta dishes are widespread in northern Italy, especially in Lombardy and Friuli Venezia Giulia. It is also popular in the countries of the Balkan Peninsula, as well as in the south of Switzerland.
It has many uses in cooking and baking. Orange and polenta cake is a popular use of this ingredient and creates a delicious gluten free cake.

HOW TO ENJOY

The classic ratio for making polenta is 1 polenta to 4 water. You can also try to use chicken broth instead of water. It's a perfect base for any kind of saucy meat or mushroom ragout. Polenta is usually baked with cheese until crusty and served with a variety of sauces.
