HOW TO ENJOY
Spelt is great in casseroles, soups, mixed with vegetables and legumes. ItÕs a healthy substitute for rice or barley.
Wash spelt and drain the water first. In a medium saucepan, combine spelt with water 1:2.5. Bring to a simmer, reduce heat to moderately low, cover and simmer until most of the water has been absorbed and the grain are soft but still firm, about 30-40 minutes. Remove from heat and let it stay under the lid for 10 minutes.
