Rice is the basis of many national dishes around the world, including sushi. There are many varieties of rice today: white, brown, long-grain, wild, etc. All of them are used in Japanese cuisine, but for the preparation of sushi and rolls, a special type is used - medium-grain rice with high stickiness, which is able to absorb water well and become moist.

The rice that we offer meets all the requirements that real sushi masters place on this grain crop. In addition, this product is characterized by excellent digestibility.

It all depends on the number of rolls you intend to make. Rice for sushi is cooked at home in small portions, boiled from 150 to 300 grams at a time. So it is easier to withstand the technology and recipe. From 200 grams of rice you get up to 500 g of the finished product. 

It is better to boil fresh rice again if there is not enough of it than to leave a large amount for later. Cooking rolls recommends warm rice. Putting it in the refrigerator after cooking or storing it for a long time is not recommended.

To cook rice for sushi at home, you will need not only special ingredients, but also special dishes. Prepare ahead of time:

  • A saucepan with a thick bottom, such as cast iron;
  • Deep bowl and colander to rinse the rice well
  • A wooden cutting board or large cup, wooden is the key here;
  • Saucepan to mix and heat the dressing;
  • Kitchen scales and measuring cups;
  • A spatula for stirring is not a spoon.

When the workplace and the necessary tools are prepared, you can proceed with the process.

Rice for sushi: a recipe at home

The exact proportions depend on the specific recipe. So read the instructions carefully. In our recipe, rice for rolls is taken from the calculation - 250 grams of cereal at a time. Refueling is calculated for the same amount.

It is important to understand that a glass with a volume of 250 ml does not mean that 250 grams of rice will fit into it. Bulk products are measured on scales, and water is measured in milliliters. Then you will get the exact proportions without errors.

Rinse the measured portion of rice under water. A colander and a deep bowl will help you just cope with the task. Rinse with clear water. Those grains that will float should be removed, and not attempted to be caught and left in the cup. After washing, let the rice drain and fill with fresh water. Then leave to soak for 15-20 minutes.

How to cook rice for sushi?

The rice, from which the water was previously drained, is transferred to the prepared pan. Only now add water measured in advance and put on fire. For flavor, add a piece of dried nori to the rice. Just before boiling, the algae must be removed, and as soon as the water boils, set the stove power to a minimum. In this mode, rice is cooked for up to 12 minutes. The water should boil away and the rice should not stick to the bottom.

Turn off, cover with a lid, and leave on the stove for 15 minutes, so that the rice reaches.

How to prepare rice for sushi at home

We transfer the infused rice from the pan to a wooden cup, if there is none, then put it on a wooden cutting board. Use a spatula for this. After that, carefully pour the dressing over the rice, while stirring with a spatula.

It is very important that the dressing is evenly distributed over the rice, and the rice does not turn into porridge during the mixing process. A wooden cup or board is needed so that excess sauce is absorbed into the wood, and does not oversaturate the grits.

Rice should be seasoned when it is moderately warm. If the rice is too hot, the dressing will evaporate, and you will not be able to achieve a bright taste and aroma. And if the rice is too cold, the grains will not be able to absorb the dressing.

Rice dressing

To cook rice for sushi at home and get the same delicious product as in Sushi WOK, you need to prepare a dressing. Mix everything until the rice comes up. The calculation of the products that we take for cooking depends on the amount of rice that we will season. In our case, this is 500 grams.

For this volume you need:

  • 25 rice and 25 white wine vinegar, you can use only rice;
  • 25 grams of sugar;
  • Half a teaspoon of salt, you can take the sea.

Mix all ingredients in a saucepan and heat until dissolved. No need to boil! After that, the mixture should cool down a bit.

Cooking with rice

Seasoned rice must be cooled to room temperature and you can start cooking. Sushi and rolls are made from it, and are also used as the basis for other similar dishes. If you are not going to cook from it right away, cover the dish with rice with a lid  so that it does not wind up. It is not recommended to store it in the refrigerator for a long time.
