Yellow split lentils are similar to red lentils and can be cooked in the same type of dishes, like soups and casseroles. They are often mixed in order to add color to hearty winter dishes.
They are one of the easiest pulses to cook. Yellow Split lentils are halved whole lentils with their outer skins removed. If you are a beginner to using lentils, these are a great place to start. Split yellow lentils cook in 15 minutes and taste nutty and potato-like. They are a great way to thicken soups and stews to make a substantial, protein rich meal. They also taste great in curries and dahls.
Brown, green, yellow, red or black Ñ lentils are low in calories, rich in iron and folate and an excellent source of protein.

HOW TO ENJOY
You do not need to soak lentils like other dried beans or peas.
Cooked yellow split lentils make a rich puree and therefore are perfect for thickening dishes such as soups and casseroles. They are also often cooked with spices to make the Indian side dish, dhal.
Dhal helps to calm the nervous system thanks to the tryptophan in its composition, also increase stress resistance, and normalize the psycho-emotional background. Thanks to the vitamins and minerals that are part of the beans, they increase immunity, cleanse blood vessels from cholesterol, increase hemoglobin, efficiency, give energy, and reduce the likelihood of developing heart disease.
For a simple dhal :
Chop 1 onion and 1 carrot and fry in a pan heated up with vegetable oil. Rinse 200g of yellow lentils and add them to the vegetables along with 1 tsp of curry powder, a pinch of freshly ground black pepper and salt. Pour 250ml of water into the pan and cook the mixture for 20 minutes over low heat under a lid.
